Casual pizza eatery shakes up the dining scene in historic downtown Roswell
Restaurateurs Hicham Azhari and Fikret Kovac and culinary director Bob McDonoughof F&H Food Trading Group are set to debut  their fifth venture together, Real Fix Pizzeria, in historic downtown Roswell. The casual, neighborhood pizzeria is set to open in spring 2014.
F&H Food Trading Group’s collection of restaurants currently reside on Canton Street in historic downtown Roswell, Ga., and include the globally inspired OPULENT, New York butcher-influenced Little Alley Steak and Salt Factory Pub a modern gastropub serving comfort food with an international twist. The second location for Salt Factory opened in Alpharetta in November 2014. The Real Fix is the newest concept from the seasoned restaurateurs and their first pizzeria.
“We’re excited to introduce a new-style, thoughtfully curated pizza to downtown Roswell,” said Azhari. “With an approachable atmosphere and both classic Italian-influenced and locally sourced ingredients, the Real Fix will be a lively addition to the neighborhood.” 
Real Fix, which derives its name from co-owner Fikret Kovac’s nickname, will boast a menu comprised of chef-driven pizzas, superior ingredients, canned beer and wine on draft. Real Fix sets the tone for the next generation of pizzerias featuring three different signature pizza styles made with dough from the restaurant’s humidity-and temperature-controlled dough mixing room and starter. Styles include the classic New York styleoriginal New York fried “House Specialty”and Neapolitan-style pizzas. All pies are available in a gluten-friendly option made with quinoa dough and vegan styles.
Inspired by the pizzerias on the streets of Napoli and New York’s five boroughs, the New York fried style “House Specialty” is made when dough is flash-fried then finished in a brick oven, giving it a crunch and char unique to this specific style of pizza. The pies will be prepared in two specialized ovens with the New York style pizza cooked at 650 degrees and the Neapolitan at 850 degrees. These unique, handmade ovens are assembled brick-by-brick by master craftsmen from materials made from the ashes of Mt. Vesuvius, allowing the ovens to achieve higher temperatures than their all-American counterparts.
The Real Fix’s design is heavily influenced by the simplicity of traditional Italian pizzerias. The 1,200 square-foot restaurant will feature a vibrant and energetic interior comprised of striped walls, central lighting from a large chandelier and an illuminated signs that offers a vintage feel.
